Meatless Mondays….on Thursday.

Meatless Mondays were started during WW1 to help with the shortage of meat.  Now it is an international phenomenon.  There are websites and blogs dedicated to the idea of having a meatless day even once a week.  Today we are having meatless Thursday.  I’m making a layered taco salad and cheese quesidillas (yeah i have no idea how to spell that).  I’m using a taco salad from Meatless Monday website, the recipes on there are amazing plus it helps to stop us from having plain old pasta when it’s meatless day.

So finally after MONTHS of talking about it the family is taking a small step towards healthy eating.  Meatless doesn’t necessarily mean healthier (loads of fat vegetarians out there) but we are doing it the healthy way.  Now I’ll never be a full fledged vegetarian (spicy tuna rolls are my weakness) but I love the idea of eating a veggie lifestyle more than 50% of the time.

Hey What’s for Dinner Mom has been doing a Meatless Monday for 52 weeks.  She shares amazing recipes and at the end of every Monday post there are links to other blogs sharing their meatless meal ideas.  I got stuck on there for an HOUR!  Great resource!  And she knits, so I like her already…..

GOOP now I realise that lots of people have lots to say about Gwyenth Paltrow…I happen to love her and so I’m including her post about Meatless Mondays.  I’m hoping to meet her some day in a yoga class and become friends and so all you haters out there can just suck it.  Plus her love of Jamie Oliver endears her to me…I love a good crush.

So come along and join me in my quest for more meatless days and I promise not to turn into some raw food vegan who won’t wear leather shoes.
